I love making omelet muffins ahead of time, and reheating for a quick breakfast before school…a much healthier option than most fast on the go breakfast ideas.

Omelet Muffins for an Easy on the Go Healthy Breakfast!

What You’ll Need for Omelet Muffins:

10-12 Eggs.

1/2 C. Milk

1 Tsp. Salt

1/2 tsp. Pepper

1/4 tsp. Onion Powder

Add ins: You Choose!!

Hash Browns

Ham

Chopped Spinach

Green Onion

Different Cheeses

Omelet Muffins Directions:

Whisk together Eggs, milk and Salt, pepper and onion seasoning.

Add in the hash browns, spinach, green onions, and cheese. Mix together.

Using a 1/3 C. Measuring Cup, fill lined muffin tins.

Bake at 350 Degrees for 20-25 minutes. Check the last 10 min and remove when the tops are a light brown.
